  1. Heat half of your oil. Drain and cook the corn until it starts to char. Add the garlic and onions and cook until it starts to brown.
  2. Add the rice and cook through. Push to the side of the pan. Add a splash of oil and cook your veggies to your liking. I like to flash fry to retain flavour abd texture.
  3. Combine and add a shake of hot sauce. Chop the herbs and sprinkle. Squeeze with lime and serve with the wedge. It’s ready to serve!
