  4. 500 ml or more Vegetable or Sunflower oil

  8. 1/2 Shallots (fine chopped)
  9. 1 Bird eyes chilli

  1. Scale, gut, and remove the tail & the gills.

  3. Rub fish with salt and chopped garlic. Leave it up to half an hour (or less)
  4. Heat up the cooking oil with high heat. Oil needs to cover the fish. Take garlic out of the fish before frying. When the oil is very hot, add the fish into the pan. Hold the tail. Leave it in the oil. Don’t move it around.
  5. When it’s golden, you can flip it. When it’s cooked. Take out the pan. Leave it aside
  6. Reduce the heat to very low heat. Then add the garlic. It will take less than 30 seconds for the garlic to be crispy and golden. Take them off the heat very quickly. Leave them aside for serving.
  7. Mix fish sauce, 1 Tbsp lime juice, chopped shallots and chillies in the serving bowl. You can adjust this up to your taste.
