Ingredients and spices that need to be Take to make Tarka dhal:
- The dhal:
- 250 g yellow split peas
- 6 cups water (plus more as needed)
- 3 whole cardamom, crushed
- 2 large pieces of ginger
- 1/2 teaspoon sea salt
- The tarka:
- 4 tablespoons cooking oil
- 1 small white onion finely sliced or diced
- 3 whole garlic cloves, sliced
- 1/2 teaspoon cardamom powder
- 1 teaspoon ground cumin
- 1 teaspoon tumeric powder
- 1 tablespoons cumin seeds, (optional)
- 1 knob butter
- Water, (add as much or little to preference to loosen the tarka dhal, optional)
- To taste salt (optional)
- Garnish:
- Handful fresh coriander leaves
Instructions to make to make Tarka dhal
- For the lentils rinse and wash several times under water until it runs clear. Place lentils, ginger slices and crushed cardamom into a saucepan and add water. On high heat, bring water to the boil and then reduce the heat to low. Cover with a lid and continue to simmer until lentils are cooked to desired softness. Tip: it is ready when the texture becomes quite mushy and the consistency of oatmeal (thick and soup consistency). Be sure to skim the froth from the top every now and again.
- Stir every now and again to check the consistency. Once lentils are mushy, keep the heat on and remove the lid. In a frying pan over a high heat, add oil and heat until very hot. Then add the onions and sauté until they become very crispy and brown. Keep stirring to avoid burning. Then add sliced garlic, stir and cook until brown.
- Now it's time to add the spices. Add turmeric, ground cumin, ground cardamom powder and cumin seeds (optional). Continuously stir to cook out the spices. Once the spices have cooked out add a knob of butter (optional, to make it creamier).
- Once the browned onions, browned garlic and spices have all infused transfer the mixture into the dhal mixture. Using a wooden spoon fully mix together all of the ingredients to let the flavours all infuse. Taste and season with salt if necessary (optional, I didn't add this). Tip: if the mixture is slightly too thick add a tiny amount of water to loosen the mixture. Cook for a few minutes and then turn off the heat and cover with a lid until ready to serve.
- To serve garnish some fresh coriander leaves over the tarka dhal and serve it with a bowl of steamed basmati rice and other side accompaniments.
